The Temple of Literature and the ethnology museum's stilt houses in the morning, then a water puppet show, which is genuinely odd and completely gripping.

Rice fields at Ninh Bình
South for a day of planting rice barefoot, riding a water buffalo, and a rowing boat through the Trang An caves.

Aboard in Ha Long
East to the bay and onto a family junk with connecting cabins, a slide off the back deck, and squid fishing off the stern after dark.
